Ingredients
- 150 ml well-chilled whole milk
- 12 g 1:1 simple syrup
- 2.5 g good-quality latte-grade matcha
- 50 ml water at 75–80 °C
- 40 ml espresso
- 150 g ice cubes
Method
- Sift matcha into a bowl, add 75–80 °C (167–176 °F) water and whisk with a chasen or small whisk until smooth and foamy.
- Let the matcha stand for 2 minutes to shed excess heat. Pull the espresso and let it stand for 1 minute.
- Mix the simple syrup into the chilled milk and pour into a clear 400 ml glass.
- Add the ice and slowly pour the matcha over the cubes to form the green layer.
- Slowly pour the espresso over the back of a spoon close to the surface. Serve unstirred and mix only before drinking.
Presentation
Serve immediately in a straight clear glass to showcase the temporary layer separation.
Storage
Prepare and serve immediately. The layered effect is temporary and not suitable for storage.
Food safety
Do not use boiling water for matcha; it harms flavor and adds excess heat that melts the ice faster.
