Dalgona Iced Coffee

Ingredients

  • 9 g instant coffee
  • 18 g granulated sugar
  • 18 ml very hot water
  • 180 ml well-chilled whole milk
  • 120 g ice cubes

Method

  1. Place instant coffee, sugar and hot water in a small bowl.
  2. Whip with an electric mixer for 2–4 minutes until pale, thick and forming soft peaks.
  3. Fill a 400 ml glass with ice and add the chilled milk.
  4. Spoon the Dalgona cream over the top in a thick layer.
  5. Serve with a spoon or straw and stir before drinking.

Presentation

Use a clear glass and a tall Dalgona layer; do not pre-mix before serving.

Storage

The whipped cream loses volume over time; make it close to service and do not store the assembled drink.

Food safety

Use clean utensils and chilled milk. This recipe contains no egg.
